It’s mid-week and you deserve a cookie. A warm, soft chocolate chip cookie that takes seconds to make and doesn’t involve perfect scooping or lots of messy cleanup. Just a handful of basic ingredients, a mug, and a spoon for diggin’ in.

This is no new idea, but I had never tried it myself before recently. And whoa, mama! I didn’t realize what I was missing!

These 1-minute mug cookies are so perfect for rewarding yourself or someone else with a little treat. And thankfully, since it’s nearly summer and we all have swimsuits to fit into soon, there’s no heaping container full of leftovers!

I mean, a big container full of cookies is hardly a bad thing. I just like to avoid the sting of having to give them away! Hehe.

What results from small measurements of butter, sugar, flour and egg is this amazing spoon-full of deliciousness! It makes you want to do a little jig, that you just created something so damn cool. It makes you want to take photos and show all your friends!

Mix your own mug cookie together and in just a minute, this could be yours! Just make sure you have vanilla ice cream or whipped cream on stand-by for the most amazing cookie experience EVER. 

1-Minute Chocolate Chip Cookie in a Mug

1-Minute Chocolate Chip Cookie in a Mug

Yield: 1 mug-full (1 large serving or 2 small servings to share)

Ingredients

  • 1 Tablespoon unsalted butter
  • 1 Tablespoon granulated sugar
  • 1 Tablespoon brown sugar, firmly packed
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon pinch salt
  • 1 egg yolk
  • 3 Tablespoons all-purpose flour
  • 1-2 Tablespoons chocolate chips

Instructions

  1. Microwave butter in a mug until melted, 30 seconds to 1 minute. With a spoon, mix in sugars, vanilla extract and salt until well-combined. Mix in egg yolk until no traces of the yolk are seen. Mix in flour. Fold in chocolate chips.
  2. Microwave on high for 40 seconds, or a maximum of 50 seconds. Serve warm (maybe even with a dollop of ice cream).
  3. Enjoy!

    Probably because of my greed and speed I accidentally forgot the brown sugar: the endresult lacked the depth of the butterscotchy toffee hints that this sugar gives, but it resulted in a very delicious, subtly sweet and superspeedy chocolate-chip-cake-in-mug. One way, or another: it’s a treat!

  132. This came out soooo good!!! If you don’t have any vanilla extract, just use 2 teaspoons of maple syrup! However, just lower the amount of sugar you use by very slightly! Was delicious!!! :) thanks for the recipe !!

  148. I used to have issues making mug cakes/cookies too. I really think it depends what mug you use and how melted your butter is; try that? I’ve always had issues in this department too, but adding more flour only made it taste like nothing :/

    Happy to say I did try this recipe myself – twice (the gf saw me making it and wanted one for her) – and I have to say, this is one of the few I’ve tried that actually came out not only the consistency it was supposed to, but deliciously simple as well :D Can’t wait to make another soon!

I’ve made this recipe a few times now, and while I do like it, I’ve found that it’s just a little too sweet for my liking – I upped the flour to 4 tbsp. and reduced the sugars to 1 tbsp. brown and 1/2 tbsp. white. This seems to “do it” for me. I blame my 6.5 year weight loss surgery – I’ve become accustomed to limited sugar! Anyway, thank you for the great “base” recipe to go off of. :) I’ve pinned it for safekeeping!

    I can’t wait to make this recipe. I have a question and a challenge though. I am currently teaching a “virtual “ baking class to my special needs young adults students. I look for recipes that I think they can do on their own since I’m not right next to them, and separating an egg will be too challenging for them; I’m not 100% sure cracking an egg will work but I’m willing to try that. Can I use a whole egg in this recipe?

  164. Hi Eileen, a whole egg cannot be used in this recipe. If you think it is possible, to separate the egg, your students can crack the egg into a bowl and gently scoop out the yolk. Or, crack the egg into one hand and let the whites seep through. Both are easy ways to separate an egg, which may be doable for your students. Alternatively, you could try my 1-Minute Chocolate Peanut Butter Mug Cake, 3-Ingredient Nutella Brownies, or 5-Ingredient Lemon Cake Mix Cookies – all very simple!
