Skillet Apple Butter Pork Chops
I love fall traditions. Unboxing all the cozy sweaters out of storage. Roaring bonfires in the backyard and sticky s’mores hands. Simmering warm apple cider in the slow cooker. But, my favorite tradition has to be our twice-a-year stomp through the apple orchard to pick the roundest, juiciest red apples we can find. Crunching into the crispest ones we find, as we hunt, of course.
After we’ve made the pies, crumbles and cakes we’ve been craving, well . . . we’re usually still left with a good ten pounds of apples! And when dinnertime is in desperate need of some creativity, you bet I’m looking at my overflowing fruit bowl for inspo!
This comforting combo of tender, juicy pork and sweet, slow-simmered apples in brown sugar and apple butter? It is what fall dreams are made of.
All you need for this delicious weeknight dinner is six ingredients, plus a pinch of salt and pepper. The aromas that this one-skillet dinner gives the house are something out of a Norman Rockwell painting. All sweet, spicy, earthy and so utterly inviting. With a scoop of mashed potatoes on the side of these Apple Butter Pork Chops, there is nothing that says “welcome home” better than this quick, cozy meal.
