Raspberry Croissant Breakfast Bake
There is nothing I love more than waking up to the smell of hot coffee. If breakfast is already cooking, too, well – that’s one helluva way to start my day!
Now, can you just imagine that breakfast tasting just a Christmas cookie? Don’t faint on me yet. You need to run – don’t walk – for your ingredient list to bake this beauty.
It may be a small miracle in a house of five, but we DO have leftovers occasionally. Last week, I had an excess of extra-buttery croissants from the local bakery, and wanted to turn them into something wonderful. One delicious idea later, and here you are with the most perfect Christmas morning breakfast. Soft, fluffy, lightly sweet, and full of juicy berries. Easy to make ahead and perfectly paired with your cup of coffee.

Ready to make your own Raspberry Croissant Breakfast Bake?
• Using your hands, tear croissants into small pieces. Layer half of the croissant pieces into your 8×8-inch (or similar) baking dish. Top with half of the raspberries and remaining croissant pieces.
• In a large bowl, whisk milk, eggs, sugar, vanilla and almond extract. Pour over the croissants. Gently press to ensure all the croissant pieces are soaking in the liquid. Top with remaining berries. Let stand for 15 minutes (or cover and refrigerate, if making ahead).
• When ready to bake, preheat your oven to 350 degrees F.
• Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. The center should be set and puffed up when done.
• Sprinkle with sliced almonds and dust with powdered sugar, if desired.
• Let stand for 10 minutes before serving.
• Slice, serve and enjoy!

Quick tip: Prepare this recipe one day ahead, to allow the flavors to really soak in! You can certainly make this same-day, but I think the flavor is even better after baking the next day. Bake for 50-60 minutes, after allowing your oven to preheat to 350 degrees F.

- 1 cup raspberries
- 2 cups milk
- 2 large eggs
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
For topping, optional:
- 1/4 cup sliced almonds (or your preferred chopped nuts)
- 1/4 cup powdered sugar for dusting
Instructions

To make ahead (up to 2 days): Prepare the croissant bake completely, cover and refrigerate until ready to bake. When ready to bake, uncover and bake as instructed.
