Sometimes, weeknights call for a comforting dessert made with love. While my sweet tooth usually tends towards chocolate, a change of pace is fun once springtime hits! The sun is shining, fresh berries are back in the markets, and a warm dessert on the back porch after a busy day truly hits the spot.
The wonderful thing about these one-bowl raspberry bars is, you can make them year-round. No fresh berries required! The main ingredients in these mouthwatering crumble bars are: flour, sugar, butter, oatmeal, vanilla, salt, and raspberry preserves – or your favorite fruit preserve flavor. That’s it!

Ready to make your own Raspberry Oatmeal Cookie Crumble Bars?
• Preheat oven to 350 degrees F. Line an 8×8-inch square pan with aluminum foil. Coat with cooking spray;
• In a large bowl, whisk melted butter, sugars and vanilla. Stir in flour, oats and salt until well combined. Set aside 1 heaping cup of the crumble mixture (this is for the topping).
• Press remaining mixture into prepared pan. Evenly spread raspberry preserves over top, covering the entire crust. Sprinkle with reserved crumble mixture.
• Bake for 30 minutes, or until edges are set and lightly golden brown.
• Let bars cool for at least 2 hours, before slicing.

Raspberry Oatmeal Cookie Crumble Bars
Ingredients
- Nonstick cooking spray
- 1/2 cup (1 stick) unsalted butter, melted
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 tsp. vanilla extract
- 1 cup all-purpose flour
- 3/4 cup old-fashioned rolled oats
- pinch of salt
- 1 cup raspberry jam or preserves, (or your preferred jam/preserve flavor, seeded or seedless)
