I made my first flavor – a sinfully good Cinnamon Bun Ice Cream – and quickly became addicted. As if ice cream wasn’t already a serious problem during this pregnancy! You could say I went a little overboard with six flavors, sure… But, did Noah go overboard stuffing his ark full of strange animals?

Cinnamon Bun Ice Cream

1 pint (2 cups) heavy cream
1 (14 oz.) Eagle Brand® Sweetened Condensed Milk
3 tablespoons butter, melted
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract

1/2 cup unsweetened cocoa powder
1/2 cup pecan pieces, or other chopped nuts
1/2 cup semisweet chocolate chips

2 oz. cream cheese, melted
2 Tablespoons butter, melted
8-10 drops red or pink food coloring, optional
1 cup finely chopped fresh strawberries

1/4 cup crushed graham crackers

Whip heavy cream to stiff peaks in a large bowl. In a separate large bowl, whisk sweetened condensed milk, cream cheese, butter and food coloring. Fold in strawberries, graham crackers and whipped cream with a rubber spatula.

11 drops green food coloring
1 cup semisweet chocolate chips

1/4 cup rainbow sprinkles

Bourbon Salted Caramel Ice Cream

1 pint (2 cups) heavy cream
1 (14 oz.) Eagle Brand® Sweetened Condensed Milk
1/2 cup caramel sauce, homemade or store bought
1 teaspoon sea salt, or to taste
3 Tablespoons bourbon whiskey

Whip heavy cream to stiff peaks in a large bowl. In a separate large bowl, whisk sweetened condensed milk, caramel sauce, sea salt, and bourbon. Fold in whipped cream with a rubber spatula.

Pour into a 2-quart container and cover. Freeze 6 hours or until firm. Store in freezer.

  1. Genius, Georgia! I’ve tried the Cook’s Illustrated chocolate and vanilla no-churn recipes and they are delicious, but these flavors sound even better! I can’t wait to try the cake batter one.

It is so versatile, too! Love all the variations, too. Just imagine cooking down the sweetened condensed milk a bit to caramelize, like dulce de leche, and adding a little salt for a Salted Caramel Ice Cream variation!   42. Georgia: Loved this idea, I made the strawberry cheesecake flavor today, but yesterday, I hope you don’t mind but I made up my own flavor using your base recipe. We like Banana pudding flavor, so I used your base recipe of whipping cream and sweetened, condensed milk, added 3 tbsp of instant banana cream pudding mix, 1 cup of diced bananas and 1 cup of roughly crushed vanilla wafers.   47. I used a KitchenAid stand mixer to whip the cream, not a Vitamix. But you can also use a food processor or electric hand mixer.

  59. No, sorry, I wouldn’t recommend evaporated milk or any other substitutions for the condensed milk.

  60. If Evaporated Milk doesn’t work because if the consistency, do you have any ideas on reducing the sweetness level? The Condensed Milk is sooooo sweet, and while I love ice cream it’s just too sweet for me. I was trying to figure out how to thicken evaporated milk and cut some of the condensed milk out, but haven’t had any luck. Any ideas would be great! Thanks in advanced!

  63. I would start by just incorporating a little marshmallow fluff at a time into the base (heavy cream + condensed milk). You could even add chocolate and graham cracker pieces to make a s’mores ice cream. Hope that helps!

  68. i just made a Caramel and Hazelnut version, incorporating caramelised condensed milk instead of the plain version and crushed nuts, no salt or bourbon. My next one will be Maple and Walnut and we were thinking of a Nutella and Frangelico flavour. Many thanks for such a fab recipe!!!

  70. For the “cake batter” ice cream, you’re adding dry, egg-free cake mix to the batter, not prepared cake batter, so yes, it is safe to eat. I believe I used Duncan Hines brand.

  72. This ice cream has more of the consistency of soft serve, so I wouldn’t recommend it for holding up a homemade ice cream cake. Firmer store bought ice cream would be a better bet, I think!

  84. For the Cinnamon Bun ice cream, does the butter need to be unsalted? All I have on hand right now is Smart Balance butter substitute, which has some salt in it.
